- Beef Tagine with beetroot and oranges
- 1 tablespoon olive oil
- plus a knob of butter
- 3-4 cloves crushed garlic
- 1 red onion, halved
- lengthways
- 40gm grated fresh ginger
- 1 red chilli, sliced and deseeded
- 2 teaspoons coriander
- 2 cinnamon sticks
- 3-4 beetroot, peeled and quartered
- 500gm lean beef cut into cubes
- 2 thin skinned oranges cut into
- segments
- 1 tablespoon dark runny honey
- knob of butter
- 2-3 tablespoons pistachios
- parsley
- salt
- pepper
